Vinification: The grapes are immediately transported to the cellar, where they undergo a destemming and a soft pressing. Fermentation takes place in stainless steel tanks AISI 304 at a controlled temperature of 27-28° C. After racking and a first pouring with elimination of the dregs thick, is controlled malolactic fermentation always in the above mentioned fermenting vats. In the spring is subjected to fining and subsequent Cold tartrate stabilization. After bottling, and before putting on the market, are refined in the bottle for 5 months.
Organoleptic Characteristics: The color is ruby red net. A nose is possible to perceive aromas of plum and black mulberry. In the mouth it is elegant, rather soft, with fairly mild tannins, good is the taste-olfactory.
